Ennis Maple Products is a non-certified Organic, low carbon operation with a wood powered evaporator.
The Ennis family emigrated to Canada from County Cavan in Ireland in 1840. In the 1860’s, their family purchased more land in that region after a brief return home to Ireland. By the 1900’s, the Ennis family began tapping for syrup. Some of their trees have been tapped by 5 generations of the Ennis family!
Their sugar bush is located on the eastern shore of Bennett Lake. Over the decades, the Ennis family has innovated their syrup making process and prioritize sustainability. They rotate the trees that are tapped to allow the maples to recover. They also utilize a high efficiency wood burning stove and use a process of reverse osmosis to remove 75% of the water from sap – cutting down on wood use!
